Under the supervision of a friend and fellow believing beekeeper, bees pollinating avocado trees on the southern end of our Central Coast produce a bold honey with a strong flavor that is not overpowering.
This honey is great for cooking or for using in salad dressings. The nectar of the avocado blossom produces a honey with a higher than usual concentration of antioxidants, vitamins, and minerals (particularly phosphorus and potassium). These properties are what give it its rich amber color and flavor. This raw and never-heated honey has been lightly strained, and it is slow to crystallize. We are pleased to be able to offer this unique profile for a honey. Supplies are limited.
